Why puffs appearing cold are hot inside?

When I took a puffs it seemed cold, but when I took a bite it was hot inside. wHY IS IT SO?

Due to frying the puff the water content on outside was evaporated. Hence, the water molecules which are known for their extreme ability to hold heat are gone. But water inside puff is unable to escape. As u fry puff the heat provided by you is captured by water molecules. So u feel it's cold outside and hot inside.
